Chore Day, Sep 4, 2020 -- Mac Uncheese

Beside doing the laundry and vacuuming, I planned a fancy meal for tomorrow — vegan Philly cheese steak with cheddar uncheese sauce. I grew up Kraft Macaroni and Cheese and I loved it. When I was old enough to buy it myself, I would make up a batch and eat the whole pot myself in one sitting. Now that I’m on a whole food, plant based diet, I’m searching for something that mimics the Kraft recipe. There are tons of vegan simulations of mac and cheese, but most of them use oils and vegan cheeses to achieve the right creaminess. They taste good, but there’s too much fat in them. They’re really vegan junk food, which I avoid.

Tomorrow I’m going to try a recipe from Vegan Mac and Cheese: More than 50 Delicious Plant-Based Recipes for the Ultimate Comfort Food, by Robin Robertson. Wow — 50 versions of mac and cheese! I feel like I’m in uncheese heaven.
